a stoup kind of thursday

i really look forward to thursdays for three reasons:
1. tuesdays are over. they're long and full of meetings, and i have a night program with 2nd-5th graders and high schoolers. tuesdays are stressful and long.

2. wednesdays are over. wednesdays are long packed full of prepping and people. wednesday nights are insanity. wednesdays are stressful and long.

3. thursdays, i go into the office late (because i've been at church til 930pm the night before). i do catchup work from the busy days prior to thursday. thursday nights have shows that are a lifelong guilty pleasure for me. thursdays are nice and slow, a regular length, and i love 'em! plus, today on the radio began all Christmas music all the time!!

today's been foggy and cold - the perfect day for soup. but we wanted something heartier, so i made a stew/soup = a stoup!!
Hamburger Stoup
1 lb hamburger
1/2 onion, chopped
3 stalks celery, chopped
2 carrots, thinly sliced
1 can kidney beans, drained and rinsed
2 cloves garlic, minced
1 cup mini-circle noodles
2 cups beef broth
1 cup water
appx. 1 tsp of each marjoram, basil, cumin and thyme (more or less to taste)
1 bay leaf

1. combine all ingredients - except beef, onion and garlic - in large stockpot. bring to a simmer.
2. brown beef, garlic and onion in 1 tbsp olive oil.
3. drain beef, and add beef-garlic-onion to stockpot.
4. continue to simmer until noodles are done. remove bay leaf. serve with crusty bread. yum!
